Monday night fat free curry

I have used the hot sauce for the first time! After a weekend of slightly too much food I felt an urge for something healthy so I decided that a chicken curry was good.

I cut the chicken breasts in slices and marinated them in mashed mango, fat-free yoghurt and hot sauce for 2 days, then cooked it slowly, added diced marrow, sweetcorn and broadbeans, a bit more yoghurt and served with rice cooked with some stock, a little olive oil and an onion, perfect food for a weeknight! I did serve it with the hot sauce on the side so everyone could make it as hot as they liked!
