Banana jam thoughts

A friend of mine went on holiday (to gourmet country France) and came home having had banana jam. I have never even heard of it before, did some research and found out that lots of people make it. However I did decide to not read any of the recipes and simply try to make it myself from scratch and by feeling only. If it is successful will make sure to have written down the recipe!
I went to the shop today to buy some bananas, couldn’t find super ripe ones and wonder if they will be better if they are not too ripe, for example mango chutney is better from unripe mangos, or will the flavour not come through properly?

Am only on a lunch break so this is a super quick post, perhaps banana and white chocolate jam would work, the flavours should be quite complementary. Looking at the time can’t wait to go home and try this! More information to follow on this one!
