Healthy stir fry prawns and salmon with lemon sauce

After quite a meat heavy weekend I wanted to eat some fish. I love fish and seafood in general but regarding fish I have three clear favourites, salmon, cod and mackerel. My problem with mackerel is that it has to be super fresh and I find it normally isn’t, therefore I tend to avoid it. Salmon is my fast food, it cooks quickly and is always nice! My local supermarket sells excellent fresh salmon and cod and this is why I usually end up with either one of the two. This time I could not resist salmon fillets.

I wanted to have some prawns and decided to do a salmon and prawn stir fry. I couldn’t decide what sauce to make and I wanted it to be very healthy. Very healthy is when I want to challenge myself to cook with as little fat as I can, very little salt and little sugar. I did some thinking and having loads of lemons I decided to make a stir fry with lemon and dill sauce, this would give me sour, some dried chilli would add the hot and no need for a lot of salt. Lemon sauce normally has sugar in it but I got around this by using agave nectar making it a healthier version.

Healthy stir fry prawns and salmon with lemon sauce

The recipe is for two but it is easy to add noodles or rice and more veg!

2 salmon fillets
1 good handful of peeled prawns
Leek
Mushrooms
Celery
Carrot
Red pepper
Sweet corn
Cherry tomatoes
Dill
Dried chilli, a good pinch
2 tbsp oil

Lemon sauce

3 lemons
1 lime
1/2 dl water
Agave nectar, 3 tbsp (more according to taste)
Corn starch, 2 heaped tsp

First mix all ingredients but the corn starch for the lemon sauce in a small pan. Add the corn starch to the cold sauce and start heating. Stir to avoid any lumps forming and when thickened take off the heat and set aside. Taste and add more lemon juice if not sour enough or water if it is too thick.

Add salt, pepper and paprika powder to the salmon. Put the oil in a hot pan and fry the salmon all around, take out just before done and set aside. The salmon will be hot and still be cooking so be careful it doesn’t over cook.

Take the celery, leek and mushroom and add to the pan, let fry on high heat until the leek is getting soft but stir so it doesn’t burn. Then add the carrots, the cherry tomatoes and the prawns, fry for a few minutes and then add the rest of the veg, again le fry for a couple of minutes and then add the lemon sauce, dill and chilli. Stir gently and make sure the lemon sauce coats everything and warm through. We ate it the way it was but if you want to make a heartier meal add rice or noodles.

      hi Rita

      The lemon sauce worked really well, I love it with chicken but I thought it would go with fish as well and it did 🙂 Agave nectar is a sweetener claimed to be very healthy and better for you than honey and sugar, I am not sure but at least I felt a little better for not using sugar 🙂
