Hemp seed topped baked tofu and tomato sauce

I got a bit carried away at the veg shop and got a whole bunch of tomatoes. They just looked so perfect, large, ripe and full of flavor! I got two large bunches and happily carried them home. It was perhaps slightly too many so towards the end of the week I was left with four and felt I wanted to do something with them. I was also thinking about what I could do to enhance the tomato flavor even more.
I did tomato powder before and a few weeks ago I bought a bag of hemp seeds, it looked healthy and I wanted to use it for a vegan dish, well time to try them!
I have never used hemp seeds before so I toasted them in a dry pan first and they are really nice and slightly nutty in flavor, I thought it would give a nice crunch to the tofu. It is possible to exchange the tofu for something else, for example a white fish could work as well.
Oven 175C
Hempseed topping
- Toasted hemp seeds
- Toasted sesame seeds
- 1 tsp tomato powder
- 1 crushed garlic clove
- 1 chilli deseeded and cut fine
- Salt, Pepper
- Oil from sundried tomatos, just enough to mix the toppings
Place the toasted hemp seeds in a small bowl, add tomato powder, the garlic, chilli, salt and pepper. Then add oil, I used oil from sundried tomatoes to get even more tomato flavor in there. Start with a teaspoon and add more, it is only to bind the topping together, it is not supposed to be runny!
Place the tofu in an ovenproof dish and place the topping on top. Then make the tomato sauce and pour around it. I pickled some shallot onions and it did add that extra flavor but try other pickle onions, or just raw shallot onions if you prefer.
Tomato sauce
- 4 large tomatoes, skinned and chopped
- 400 g Tofu
- 1 tsp caper-berries, chopped
- Pickle shallot onions, chopped
- 1 crushed garlic clove
- 2 spring onions, sliced
- Salt, pepper
Bake under tinfoil for 20 minutes, then take the foil off and bake for an additional 10 minutes.
It worked really well, the tofu is so mild in flavor and the tomato came through without being too overpowering. I did garnish with some home sun dried tomatoes as well for extra texture and burst of flavor but I didn’t serve it with anything more, it was perfect for 2 people, filling but still light and dinner was served in 30 minutes!

well, I’m not a huge fan of tofu, but this sounds pretty good. The topping is crunchy and salty and the sauce fresh.
Tofu is a bit if a required taste, I did the same with cod and it was lovely! 🙂
I’m a big fan of tofu, and am always looking for new ways to eat them. This sounds like a delicious combo with the hemp seed topping and tomato sauce.
