Two tortilla pizzas

With the new year and the resolution to eat healthier I decided to use up the left over cheese from the holidays. I had some soft tortillas left over and I love to use them as a pizza base. I went through the fridge and the fruits and decided to use a small piece of La Buche goats cheese (I can never bring myself to bin any good cheese no matter how small the piece is) that I had along with a small handful of grapes. As they are slightly on the small side I also did a chicken pizza.

They both serve 2 as a snack each – oven on 200C, cooking time 10-15 mins

Goats cheese and grape pizza

  • 2 soft tortillas
  • 4-6 grapes per person, cut in half
  • a small piece of La Buche, a soft and mild goats cheese, cut up in chunks
  • 1 slice of cooked ham per pizza
  • 1/2 green pepper cut in cubes
  • salsa
  • 1/2 small onion, diced
  • 1 tbsp finely grated Manchego cheese/pizza
  • salt & pepper
  • balsamic glaze

Use the salsa as a base and add the ingredients and the grated Manchego last. Bake for 10-15 minutes and serve.

When the pizza is ready the edges are crispy and the cheese has a nice colour. Add some salt and freshly cracked black pepper on top.


Chicken, shitake mushroom and feta pizza

  • 2 soft tortillas
  • Shredded cooked chicken
  • 2 Brussels sprout, shredded
  • 2 cocktail tomatoes, quatered
  • 2 shitake mushrooms, sliced
  • Feta cheese, crumbled
  • Salsa

Spread the salsa and add the ingredients. bake for 15 minutes. I added some balsamic glaze, no salt as the feta cheese is salty and served.


I didn’t have enough veg for a green salad but I did a watermelon and feta salad instead and it worked very nice. A twist of black pepper on top of the salad gave it some heat. Enjoy a super fast and easy pizza. Everyone can pick their own favourite ingredients to make their pizza just the way they like it!
