Fish finger wrap

A KFC opened a few weeks ago just down the road from where I live and the demand for fast food seems quite steady. My idea of fast food is fish fingers, they take almost no time at all to cook and are readily available in the freezer.

Fish finger wraps 

  • fish fingers, 3-4 pp, cook for 15 mins in a 200C oven
  • 1 celery stalk, peel off the stringy part and cut lengthways
  • 1 small can of sweetcorn, drained
  • cottage cheese
  • halumi cheese, I use light and dry pan fry it
  •  1/2 red pepper
  • 1/2 gems lettuce
  • 1 small piece of cucumber, cut lengthways

Cut everything up and serve with guaccamole, I used tofu in mine and salsa.



Tofu guaccamole

  • 1 avocado
  • 1 garlic clove, crushed
  • 1/2 pack firm silken tofu
  • juice from 1/2 lemon
  • 1 tsp chilli sauce or 1 fresh chilli, chopped
  • 1 handful of parsely

Also add

  • 4 cherry tomatoes, chopped
  • 2 spring onions, sliced
  • salt to taste

Place all the avocado, garlic, tofu, chilli sauce and juice of the lemon in the food processor and whizz until mixed and smooth, then mix in the tomato, spring onion and salt to taste.


I served it with soft tortilla wraps for another quick and healthy meal.
