Hearty chicken soup for a cold night

Sometimes, and especially when it is cold out and I feel a little tired I think chicken soup is one of the best thing you can eat. On the way home from work I managed to get to the butcher ten minutes before they closed! Their chicken is just so much better than the one from the supermarket and I spent £3.27 in total It is possible to make this meat go further by adding more stock and veg.

Hearty chicken soup, serves 2

  • 1 chicken breast, cut in 4 chunks
  • 1 sausage, I bought a pork and chilli
  • 1 celery stalk
  • 1 carrot, cut julienne
  • 1/2 dl pearl barley
  • 1/2 onion, cubed
  • 1 handful of pasta
  • shredded cabbage
  • Spinach, fresh
  • A few basil leaves
  • Salt & pepper

Bring the stock to boil and add the pearl barley, carrot and celery and simmer for about 15 minutes. Then add the sausage, pasta, cabbage and chicken and let simmer for 10 minutes, then add the spinach and basil leaves, taste with salt and pepper if necessary. take it off the heat and let stand with the lid on for another 5 minutes. Shred the chicken and put back, slice the sausage and put back in the soup and serve. I used the basil leaves whole and they gave a great flavour burst when you ate one. This is a light dinner but if you feel that you need more I love a toasted cheese sandwich to go with it.
