Pork Belly and halumi hash

What is the best thing to do with cold cut meat? When we have some in the house we always have the same discussion. The man wants to eat it, cut in to chunks with a piece of toast, or possibly with mash, I most often prefer to eat it cooked somehow. Luckily we both love hash and this time I had some left over roast pork belly. I didn’t have a lot but I had a halumi cheese so I decided to use this as well.
Roast pork belly and halumi cheese hash, serves 2
- Roast pork belly, trimmed of all fat and cut in to cubes
- Halumi cheese, cubed
- 1 onion
- 1 potato, cubed
- 3 cauliflower florets, sliced
- red peppers
- 1 romaine lettuce head, sliced thickly
Start by frying the potato, onion and the cauliflower.
When that is just about cooked through add the halmi and pork. When the halumi has some colour and the pork is warmed through add the lettuce and the pepper. It is ready when the lettuce starts to wilt.
Pan fry an egg, I like mine, sunny side up, drizzle over some sweet chilli sauce, I bought some beautiful yellow chilli peppers at the market the other day and made some sweet chilli sauce, perfect for hash!
