Smoked cod with prawn & egg sauce

Sundays for me are days for a late brunch and getting things done around the house that never gets done during the week. This past Sunday we had things to get done and the smoked un dyed cod I bought for brunch was still in the fridge when I got home. I was going to serve it with a poached egg and toast. Somehow I didn’t feel like eating poached egg for dinner, but I really wanted to eat the cod, it looked delicious.

Poached cod with egg and prawn sauce, serves 2

  • 400 gr smoked, un dyed cod
  • a bunch of dill
  • 1 small pack of pre cooked prawns
  • 3 eggs, hard boiled
  • chopped parsley
  • 4 ½ dl semi skimmed milk
  • 3 ½ tsp arrow root
  • salt & white pepper

Start by boiling the eggs. Once they are boiling boil water with dill and salt in a pan with a lid. Once that is boiling add the cod, cut in to chunks, take it off the heat, add the lid and let stand for 20 minutes.

Whilst that is cooking make the milk sauce, once thickened add the eggs, prawns (chopped) and parsley. Plate up and serve with a wedge of lemon.

The smoked cod made the dish more interesting and I really liked that background smoky flavour. I still remember overcooked fish in school but cooking it this way guarantees perfect, poached fish every time!
