Sausage and bacon with courgette pasta

I always know when it is summer when I need to go and water the allotment! Lately it has been very dry and all the veg are growing like mad in this hot weather. It looks like there will be a heap of runner beans.

And the first courgette of the year!


I wanted to use all of the ingredients and decided to make a quick dinner with courgette pasta.

Sausage and bacon with courgette pasta

Preparation time 10 minutes 

Cooking time 15 minutes 

Serves: 2 people


  • 1 courgette
  • 3 rashes of smoked bacon (I used streaky)
  • 2 sausages
  • 1 tin of pomodore tomatoes
  • 1/2 tin of water
  • 1 turnip
  • 2 garlic cloves
  • a good handful of kale
  • 1 onion
  • 2 celery stalks
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • salt and pepper to taste


  • 2 spring onions 
  • coriander

Peel the turnip and cut it in to cubes, chop the onion, the garlic and the celery stalks. Remove the core from the kale and roughly tear the leaves. Use a potato peeler lengthways on the courgette to make courgette pasta strands.

Fry the bacon crispy in a pan and remove when done, I like them a little crispy to add texture. When the bacon is done remove them and add the sausage meat, take it out of the skin and cook in pieces in the pan. When the sausage meat is beginning to colour add the onion, celery, garlic, soy sauce and the tin of tomato and add half a tin of water. Let boil for 5 minutes.

Add the turnip, this will still have a crispy bite when cooked and add and the kale. Simmer for another 5 minutes.


Then add the courgette pasta, simmer for another 5 minutes, taste and add more salt, pepper and more honey if needed. Before serving add the spring onions, the crispy bacon and some coriander.


It is not often I manage to cook a whole meal in a pot I have to admit it is so much better when doing the washing up!
