Salmon wrap with potato salad and wasabi peas

I had some salmon trimmings left over and decided to use them as a snack. One of my favorite ways to eat salmon is pan fried so i decided to pan fry them and serve them in a lettuce wrap. Some left over potatoes gave it a bit more body.

Salmon and potato salad lettuce wraps

  • raw salmon trimmings 
  • 2 cold, boiled potatoes
  • light creme fraiche
  • 1/2 tsp mustard
  • 1 spring onion
  • salt & pepper
  • oil for cooking

For serving

  • cubed pepper
  • wasabi peas
  • Gem lettuce leaves

Salt & pepper the salmon trimmings and pan fry in a hot pan with oil until crispy on the outside and just cooked through.

Mix the creme fraiche with mustard, salt and pepper, chop the spring onion and add this as well. Cube the potatoes and mix with the creme fraiche.

Place all the ingredients in the lettuce leaf and give it a sprinkle of pepper and wasabi peas before serving. The wasabi peas gives a nice pop of flavor and it is great eating in the garden with a nice glass of wine! I only did one each but we could so easily have eaten more of them.
