Hotsauce marinated and roasted butternut squash and chicken

I love foods that are quick and easy. It doesn’t necessarily have to cook in five minutes, a little planning can make all the difference! This time I was at home but I had a few things on so I needed something that was quick to prepare and then took care of itself.

We still have quite a lot of butternut squash and I had some boned chicken thighs in the fridge, a perfect match. I needed a quick flavour impact and opted for a hot sauce quick marinade.

Hotsauce marinated and roasted butternut squash and chicken

Preparation time 10 minutes 

Cooking time 35 minutes 

Oven 190C or 370F

Serves 2


  • ½ butterut squash
  • 4 boneless chicken thighs
  • 1½ tbsp hot sauce
  • 1 tbsp sesame seeds
  • 1 tsp mustard seeds
  • 1 tbsp olive oil
  • salt & pepper

Peel and de seed the butternut squash, then slice it. Cut all the visible fat off the chicken thighs and place in a bowl. Mix the remaining ingredients for the quick marinade. Pour the marinade over the butternut and the chicken and make sure everything is covered.  Then place everything in a oven proof dish, I used my frying pan and place in the oven with the chicken on top for 35 minutes. If you are using slightly older butternut squash it might take a little longer to cook.

The chicken and butternut cooked at the same time, the kitchen was smelling lovely.


I had made a tomato sauce with chilli that I served on the side. It was quick and very easy as long as you have the time to wait for the food to cook. The recipe is easy to double if wished.
