Healthy and delicious curried butternut squash soup

I had invited my friend J for dinner and in true democratic spirit she did a delicious butternut squash soup as a starter, healthy and delicious. It was lovely and creamy without a drop of cream and very low in fat, what is there not to like?

Curried butternut squash soup

Preparation time 10 minutes 

Cooking time 20 minutes 

Serves 4 as a starter or 2 as a maincourse 

Ingredients

  • ½ butternut squash
  • 5 dl chicken stock (or vegetable stock for a vegetarian/vegan version)
  • 1-2 tsp curry powder (it depends how strong you want it)
  • ½ tsp smoked paprika
  • 2 tbsp oil
  • salt & pepper

Garnish

  • 2 slices of thinly sliced pancetta
  • chopped parsley

Peel and de seed the butternut squash and then cut it in to cubes. Place everything in a bowl with the spices and the oil, mix and make sure the butternut squash is coated. Once this is done heat a frying pan and add the butternut when it is warm. As there is oil on the butternut there is no need to add any extra fat.

When the butternut is cooked though place it in the blender together with some of the stock and blend until smooth, add more water as you blend. Return the soup to the pan and keep warm, taste with more salt and pepper if necessary, add more stock if the soup is too thick.

Pan fry the pancetta (if using) and when you are ready plate up the soup, add a sprinkle of freshly chopped parsley and the pancetta and tuck in. It was rich, there was a curry tone complementing the butternut flavour and a hint of the smoked paprika. The parsley added freshness and the salty, smoked pancetta made for a delicious soup, what a treat from J!

If you use less stock it can be served as purée with a main course and it can easily replace potato mash to be served with either meat or fish, I think it would be fantastic with a piece of pan fried turbot.
