Salmon and veg broth

Going home from our US holiday we narrowly escaped another ice storm in Tennessee and a snow storm in New York. The flight from Nashville was delayed due to snow in New York. Once we landed it had cleared but making our way from Newark to JFK the ground was covered in snow and more coming down thick and fast again and we were lucky to get out.

When we came home I had an urge for a healthy and light dinner. I was too tired to spend too much time cooking so I got some salmon and veg and decided to cook a broth.

Salmon and veg broth

Preparation time 10 minutes 

Cooking time 15 minutes 


  • salmon
  • 8 dl or 3 cups of chicken stock
  • 1/2 dl or 1/4 cup frozen sweetcorn
  • 1 carrot
  • 1 celery stalk
  • spring onion
  • 3 brussels sprouts
  • coriander
  • spinach
  • 2 plum tomatoes
  • 1 dl or 1/2 cup soup mix with pearl barley, lentils and pasta (choose the one that cooks in 10 minutes for a quick meal)
  • 1 tbsp rice wine vinegar
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tsp hot sauce
  • paprika powder
  • salt & pepper

Peel the carrot, chop the spring onion, the celery and the coriander. Remove any stalks from the spinach and set aside with the chopped coriander. Place the chicken stock, the carrot and the celery in a pan and bring it to a boil, then add the coup mixture and let boil for 7 minutes.


Whilst that is cooking clean the salmon and add salt, pepper and paprika powder. Pan fry it in a teflon pan with a burst of cooking oil. Make sure the salmon gets crispy on the outside and let it rest slightly before serving. The salmon should be done in about 10 minutes.

When the broth has simmered for 7 minutes add the mirin, rice wine vinegar and the soy sauce and taste. Add the spring onion, the spinach, the coriander, the hot sauce and sweetcorn. Let simmer for another 3 minutes and then turn the heat off and let stand until you are ready to eat.

Add the broth to deep bowls and then stack up the salmon, garnish with tomato and serve.


It was light but still hearty and warming dish that tasted just like home.
