Chicken wings with sweet potato fries and blue cheese

The other night I tried to stay up and watch Superbowl. I didn’t make it to the end but I was longingly thinking of American foods in general and chicken wings in particular! I couldn’t resist going to Robson’s Butcher to buy some wings and some Roquefort from their deli, no chicken wings without the blue cheese dressing!

Roquefort is a wonderful blue sheeps milk cheese, it has a tang and it has a lovely saltiness. I knew it would be perfect for the blue cheese dressing. For me the complete meal would include, besides the chicken wings and blue cheese dressing, fries and celery sticks. Roquefort can of course be replaced with the blue cheese of your choice.

Roquefort based blue cheese dressing 

preparation time 5 minutes 

cooking time 0 minutes 

serves 2-3 (it depends how greedy you are) 


  • 140 gr or 5 oz blue cheese
  • 5 heaped tbsp of buttermilk
  • zest of 1 lemon (unwaxed)
  • fresh ground black pepper

Mash the blue cheese and pour over the blue cheese. Zest the lemon on top.


Mix everything and taste with black pepper, then set aside until you are ready to eat. This was delicious with celery sticks and I have to admit I tried a few whilst waiting for the food to cook.


I prepared the chicken and the fries and cooked them at the same time.

Sweet potato and garlic fries 

preparation time 10 minutes 

cooking time 20 + 5 minutes 

oven 200C/400F + 240C/465F 

serves 2 


  • 3 small or 2 larger sweet potatoes
  • 1 heaped tsp hot sauce
  • 2 garlic cloves
  • 1-2 tbsp oil
  • salt & pepper

I didn’t peel the sweet potatoes as I like the skin on so I just rinsed them before cutting them the size of fries. Crush the garlic and mix with the hot sauce, oil, salt and pepper. Mix with the fries and make sure they are covered. I place everything in a plastic bag, blow in some air and shake, this almost always guarantees an even coating.

Smoked paprika chicken wings 

preparation time 10 minutes 

cooking time 20 + 5 minutes 

oven 200C/400F + 240C/465F 

serves 2 


  • 8 chicken wings
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp mustard seeds
  • 2 tsp sesame seeds
  • 2 tsp honey
  • 2 tbsp oil

Cut the tip of the chicken wings and then cut them again by the joint. Mix the spices, honey and oil. Coat the chicken wings and place in an ovenproof dish on a non stick baking paper and bake with the fries for 20 minutes.

When the 20 minutes are gone turn the oven up and bake the fries for another 5 minutes. Take the fries out and bake the chicken wings for another 5-7 minutes, until the skin is crispy.


I cut up 3 celery stalks to complete the dinner. Chicken wings are the perfect finger food, I didn’t even bother with forks, I just got the kitchen roll out.


It was very messy but satisfying, sadly no American football to go with it but it was just as I had imagined it.
