Raw strawberry and raspberry jam with Chia seed

One of the ingredients I got from The Eco Green Store was chia seeds. Chia seeds are hailed as a superfood, it is easy to sprinkle on your food to add that extra crunch and health boost. The Eco Green store strives to make fairtrade and organic food cost efficient and available to everyone. I love the selection and they of course carry Chia seeds.

When Chia seeds are mixed with water they change and develop in to a gelatinous mixture. I can imagine it being great in smoothies but I wouldn’t try and drink it any other way.

I have no problems sprinkling Chia, or any other seeds on top of my food so I did a little research and came across the suggestion of making jam, using the gelatinous Chia seeds mixed with water as a thickening agent.

 

Raw strawberry and raspberry jam 

preparation time 10 minutes 

cooking time 0 minutes 

makes 1 large jar

Ingredients

  • 1 punnet of strawberries
  • 1 punnet of raspberries
  • 1 tbsp Chia seeds
  • 2 tbsp water
  • 2 tbsp agave nectar, or runny honey

Place the Chia seeds in a small bowl with water, mix and set aside for 10 minutes. Rinse the berries.

Place the berries, the Chia seeds and the honey in a blender and blend until it is all mixed and the jam is done! It couldn’t get any easier.

I tried it straight away and it has a fresh flavor and it is not too sweet. I tried it on a piece of cheese and that was very nice.

Whilst unpacking my kitchen I came across some meringues and wanted to use the jam for pavlovas. I didn’t have any cream but I did have some coconut yogurt and I decided to use this instead. It was the quickest dessert ever. I served more jam on the side and whilst thinking about what else to do with the jam I heard the distinct sound of a spoon against porcelain and someone said “it would be a shame if it goes off” whilst finishing the last of the jam! I guess that sorted that problem.

This was the most amazing and quick way to make jam and I will make sure to stock up on Chia seeds!

  1. Wow, love that. I think the fresh flavor of raw berries is wonderful and the chia addition is brilliant.

      Thank you 🙂 It was perfect as I didn’t need to add any sugar, just a little honey, the berries were so sweet in themselves. The Chia seeds added some extra crunch and thickened the jam nicely 🙂

    I like this idea very much. I assume the chia seeds thicken it up as pectin would in a cooked version. Will give it a try.

      they did act as pectin and it was the easiest jam I have ever made! If I had used only strawberries I might have added a little chilli as well! Jam in 10 minutes! Let me know how it goes!

      Chia seeds have lots of goodness and a nice crunch so well worth a try 🙂 This was my first tie and the jam was a perfect way to use them 🙂
