Cauliflower soup with crispy chestnut and sesame seed topping

I love to eat what is in season and if it is local, even better! At the moment there is an abundance of cauliflower. It is so delicious and so cheap I have bought lots of them. After having made cauliflower bake, cauliflower rice and cauliflower salads as well as serving it on the side I wanted to make a soup. Cauliflower can be very bland if overcooked but it can be so delicious. I think that chilli sets it off, just a sprinkle on top is perfect and I decided to pair this up with some fresh chestnuts. I am still working my way through the bag we picked. I added some sesame seeds as I just love the flavour. I have tested different ways to cook this soup but in the end I found that the cauliflower is so delicious I went back to basic and this is my favourite!
Cauliflower soup with crispy chestnuts and sesame seeds

Ingredients
- 1/2 cauliflower
- 5 dl chicken stock
- 1 dl cream (I used low fat single cream)
- truffle salt and white pepper to taste
Garnish
- fresh chestnuts
- sesame seeds
- chilli
To serve
- bread
Chop up the cauliflower. If the leaves are fine use them as well.
Bring the stock to boil and add the cauliflower, let boil until soft, about 10 minutes, add the cream. Bring to the boil for another couple of minutes and the place in a blender. Blend until smooth and
I chopped the peeled chestnuts and pan fried them with sesame seeds in a pan with a little butter and bacon fat I had left over from breakfast until crispy. A sprinkle of salt and cracked black pepper finished it off. Drain on kitchen towel to get rid of any excess fat and set aside until ready to serve.
In my attempt to be healthy I sprinkled some barley grass powder on to the plate, added the soup, the chestnut and sesame seed crumbs and last added some chilli from the greenhouse that I had dried.
The chilli adds a nice bite and this way everyone can add as much or little as they like.

The soup is light but very satisfying. The weather is supposed to turn to cold and windy, I might need some more cauliflower!
