Broccoli and stilton soup

Winter arrived seemingly over night. December was the balmiest in history with temperatures up to 17C and not a snowflake or even frost in sight. It didn’t quite feel like winter but then it all changed as storm Frank arrived. We didn’t get much rain but very cold winds and cold weather always makes me crave soup.

 

There is something so lovely about tucking in to a bowl of soup. It can be the perfect fast food and as I came home from a cold and windy but beautiful walk I felt and urge for soup.

I rummaged around the fridge and decided to make a broccoli and stilton soup. A friend said she made some the other day and I did have little twinge of food envy.

Broccoli and stilton soup 

preparation time 5 minutes 

cooking time 10 minutes 

serves 2

Ingredients

  • 1 head of broccoli
  • 80 gr or 2.8 oz stilton, or any blue cheese of your liking
  • 8 dl or 4 cups of chicken stock
  • 1 tbsp Shaoxing rice wine
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 tbsp cream
  • 1 good handful of herbs, I used coriander and dill
  • salt to taste
  • chilli flakes

Separate the broccoli florets and cut them in half. Cut the fibres from the stem and cut that up as well. Bring the broth to a boil with the broccoli, Shaoxing rice wine, rice vinegar and soy sauce and boil until soft. Place all of the broccoli and a little of the stock with the stilton and the herbs in a blender and blend until smooth.

Place the soup back with the remaining stock, mix. Add the cream and taste with salt before serving it sprinkled with chilli flakes.

I cooked the soup from scratch in less than 20 minutes and it was rich and full of flavour. We lit a fire and enjoyed the soup in front of it, warm and cosy, just perfect for a cold day.

    This soup looks so enticing! I love the color, and the stilton cheese instead of cheddar cheese sounds like a great variation!

      I love vegetables with cheese and what better than to make them in to a soup? Broccoli and stilton works a treat, it is worth a try 🙂
