Prawn salad with lemon dressing

Winter arrived late this time and it bought cold winds and bright and sunny days. I have to admit I have eaten way too much comfort food and cheated on the exercise. After warming curries and way too much carbs I wanted to break it up with a salad.


I try to keep a bag of prawns in the freezer as my to go food and this would be perfect. The only thing that really took a bit of time was to de vein the prawns, everything else cooked very quickly.


Quick fried prawns with warm citrus dressing

preparation time 10 minutes

cooking time about 4 minutes

serves 2 as a starter


  • 200 gr raw prawns or 7 oz, de veined
  • 1 grapefruit
  • 1 lemon
  • lettuce
  • 4 spring onions
  • coriander/cilantro
  • 1 tbsp sugar
  • 1/2 tsp crushed pepper
  • salt and pepper to taste

Start with the dressing, peel the grapefruit with a knife. Cut out grapefruit fillets, hold it over a pan and catch the juice. Squeeze the core so you get all of the juice in the pan.

Squeeze the lemon juice in to the pan, add the sugar and bring to a boil. Boil until it starts to caramelize slightly, add a little more sugar if needed and add the chilli flakes.


Heat a pan with some oil. Salt and pepper the prawns before placing them in the pan with the spring onions.

Toss the cooked prawns in the dressing.

Mix the leaves and coriander, add the prawns and the grapefruit. Last add the remaining dressing before serving.

It was a light salad, still warm so perfect on a cold day but I bet the prawns, barbecued would be great in this salad. I can’t wait for the summer.

  1. I too have been eating indultently this winter and need to eat more salads and lighter fare. Love this with the warm dressing.

    This sounds lovely Petra! Warm and refreshing is such a tricky combination to achieve. I love the seared green onions, and they look so elegant in their full length.
