Curried chicken with walnuts and grapes

We finally had a couple of warm days! Sunshine brings out the best in us This time of the year I always feel sun starved and pale. Any sunshine is so welcome and we bundled up the dogs in the car to go for a lovely walk.

 

The first fennel of the year started to come up. It is tender and delicious.

The dogs loved running around but still remembered to keep an eye out for treats.

This handsome beast seemed to enjoy the weather.

It was such a lovely day I wanted something light to eat after our walk and  I used some left over chicken from the day before.

 

Curried chicken with brie, grapes and walnuts

preparation time 10 minutes 

cooking time 0 minutes 

serves 2 as a starter or snack 

Ingredients

  • 2 dl or 1 coup of diced, cooked chicken
  • 1 handful of grapes
  • 3-4 tbsp light creme fraiche
  • 1 1/2 tsp medium curry powder
  • salt and pepper to taste
  • walnuts for decorating
  • 1 head of endive
  • 1 slice of brie cheese

Mix everything except the walnuts and the endive. Taste with salt and pepper. Place a slice of brie cheese and the chicken mixture in an endive leaf, garnish with walnut and serve.

It was a great dish after the walk. The bitter endive, the soft brie and the curried chicken went well together and the walnuts added flavour and texture. I can’t wait for many more sunny days and long walks.
