Improvised lobster and mango

Lately something strange happened, due to various reasons I seem to have lost my food mojo. I wasn’t even interested in what I ate, just had some fuel to keep going. I had time set aside over Easter but no real interest so I took a bit of a break. This morning when I woke up the sun was shining and I was really hungry. All of the sudden I wanted to cook again. I wanted to try new things and I had a ripe mango that I through I would use.
I went on my Saturday shopping round and saw the first local lobster of the season.
I new I had to buy one, they were caught last night and cooked in the morning, it can’t get fresher than that. I remembered the mango and an image I had seen of lobster and mango. There was no further description so I improvised.
Mango sauce
preparation time 5 minutes
cooking time 0 minutes
serves 4
Ingredients
- 1 ripe mango, peeled and stone removed
- 2 tbsp citrus vinegar
- juice of 1/2 lime
Cut the mango in to chunks and blitz until smooth in the blender.
Add the lime juice and the citrus vinegar.
Citrus vinegar
Taste and set aside until you are ready to serve.
Take the lobster out of the shell and place it in the fridge until serving.
Plate up the lobster with sliced mango, chilli, blood orange and serve. I liked the mix of the mango sauce and the fresh mango and it worked with the lobster.
One lobster went a long way. The first lobster of the season was delicious.

Oh no sometimes that happens, we lose our motivation or interest. Life can do that to you and sometimes its good to have a wee break too. However glad you’ve got ur mojo back and with a great dish too!

I only went to mooch really and meet up with a friend, but I did come home with some beautiful Greek walnuts and pistachios – there are such a vibrant green and pink, they’re gorgeous! I won’t want to eat them!!

So happy you got your cooking mojo back and this dish is truly inspired, LOVE lobster and mango never thought of putting them together but I can almost taste how delicious it is.

I would be more prone to pair seafood with citrus but the mango worked with the vinegar and the added chilli. The picture I saw was so nice I knew I had to give it a go!
