French onion and marrow soup

Winter arrived in a flash. One day it was sunny and I had no intention of wearing a jacket and all of the sudden I felt like I almost got a brain freeze walking along the sea front! Cold winds swept in along with some very cold rain, never a nice combination. Weather like this calls for staying in and eating warming and hearty foods.
I didn’t want to go outside at all so I decided to cook with what I had at home. I had some vegetable stock, a bag of onions and some marrow, perfect for a soup. I thought of French onion soup but didn’t have any bread so used pumpkin seeds instead. They were not as filling as bread but added a nice texture. It isn’t a classic French onion soup, this is quicker but still full of flavor and it is guaranteed to warm you up.
The inside of the marrow looks like something alien but quite beautiful and I couldn’t resist taking a photo of it.
French onion and marrow soup
preparation time 15 minutes
cooking time 20 minutes
oven 210C or 410F
serves 2
Ingredients
- 3 onions, peeled and sliced
- 8 dl or 4 cups of vegetable stock
- a piece of marrow, peeled and sliced thinly
- 2 cloves of garlic, peeled and crushed
- 1 knob of butter
- 1 tbsp Shaoxing rice wine
- 1 dl or 1/2 cup grated cheddar cheese
- salt and pepper to taste
- chilli flakes
- pumpkin seeds (optional)
- oil for cooking
Place the oil and butter in a pan with the onions and crushed garlic until the onions are soft. Add the Shaoxing rice wine and the stock and let simmer for 10 minutes. Taste with salt and pepper.
Place the soup in individual, oven proof bowls and add grated cheese, chilli flakes and pumpkin seeds before placing in the oven until the cheese is melted and is slightly golden.
Let the soup stand for a few minutes before serving as it is piping hot.
This was a quick soup but it hit the spot and I felt a lot warmer and energized. I did have to go out later that day and got my woolly hat out, I just love it and it is finally cold enough! Amazing what some soup can do.
