The weather lately has been so nice we can’t seem to stop barbecuing. Weekends filled with sunshine seems to be inspiring to get the charcoal out and the fire going.
There is something so soothing and yet exciting about fire and food and I prefer charcoal to gas.
My friend cooked and he had bought mince and made burgers, loaded with spices, garlic and herbs.
The carrots went on first as they would take the longest together with jacket potatoes, just slightly pre cooked.
A couple of head of garlic was wrapped in tinfoil and slowly cooked until soft and delicious to spread on bread or pretty much anything.
I love lettuce on the barbecue so we cut some gem lettuce in half and added them whilst cooking the burgers. I like the slightly charred flavor the barbecue adds.
The rack of lamb turned out lovely. The fat has started to render and crisp up.
Since our barbecue last time the carrots were the star of the evening.
I did a salad and a blue cheese dressing to go with the food and after extensive blue cheese dressing research I have found a perfect three ingredient formula.
My perfect blue cheese dressing
preparation time 5 minutes
cooking time 0 minutes
serves 3-4
Ingredients
- 150 gr blue cheese, I like stilton but use any you like
- 1 1/2 dl or 3/4 buttermilk
- Juice of 1/2 lemon
Place all of the ingredients in a blender until it is slightly chunky. I like chunks of blue cheese but you can also blend until the dressing is smooth if you prefer.
The dressing is super quick to make and it is perfect for salad as well as dipping.
It is still way to cold for eating outside but it is still nice and I can’t wait for the warm summer (let’s hope it is coming) when we can eat outside and just linger over a glass of wine all evening.
