Steak with celeriac slaw

A lot of things in life are about teamwork. One great example is the garden and the allotment. M is a great gardener, at the moment some amazing vegetables are growing in the greenhouse, in the garden and at the allotment.
After a couple of weeks of hot weather everything is growing like crazy and this is where the other side of the team work comes in. I am very good at picking and cooking.
The summer kale is starting to come through, the spinach is growing, cabbages, planted last autumn are perfect for picking, the edible flowers are starting to come through and the first strawberries are ripe.
There were only a few ripe strawberries so we ate them on the spot, sometimes the best way to enjoy them.
I picked some spinach, pinched a few summer kale leaves and herbs to go with a steak dinner.
A while back I went with friend to a steak restaurant. The meat was served with a celeriac slaw. I like celeriac and use it in different ways but have never used it to make slaw and now was a good time.
Celeriac slaw
preparation time 10 minutes
cooking time 0 minutes but 1 hr salting the celeriac
serves 4
Ingredients
- 1/2 celeriac, shredded
- 1 green apple, shredded
- about 1/2 tsp salt
- juice of 1/2 lemon
- 1 tbsp mayonnaise
- soft herbs, dill, chives and coriander
- 1/2 de seeded chilli, sliced thin
Shred the celeriac and mix it with the salt. Let stand for a minimum of 30 minutes, for up to an hour.
Add the shredded apple, the soft herbs, mayonnaise and the lemon juice. The celeriac will have softened a little but still have a crunch.
I took the other half of the celeriac cut it in the shape of fries and roasted them until crispy on the outside and soft on the inside.
Steam the spinach and kale. Salt, pepper and add a little barbecue spice to the steak and pan fry for 12 minutes. Rest the steak for an additional 12 minutes before slicing it against the grain and serve.
The celeriac slaw was great with the steak and the fries. The spinach and kale were so tender and the season just started.
Never tried celeriac slaw. Sounds amazing, lots to learn from you thank you Petra for the share.
