I have been thinking about Halloween and if I should make something special. I usually don’t bake but I make pasta every week for the market so I thought I would make a special Halloween pasta.

 

Two colored pastas seems to be popular so I made an orange and black pasta using Annatto seed powder and some oh so black squid ink pasta for the black.

I find fresh pasta so much lighter than dried pasta and best of all, it cooks in one to two minutes.

I always flavor my pasta so here I just added some extra virgin olive oil, a sprinkle of sea salt and Parmesan cheese. I did slice a chilli on top as well, just to add that zing.

This pasta is perfect for those impatient guests that hmm, are rattling away whilst waiting for the food to be served!

I guess eating a raw Carolina Reaper chilli in addition is ok if you don’t have a stomach to worry about.

Another super quick way to make pasta delicious is a no cooking sauce. I used my handkerchief hand cut pappardelle. Handkerchief pasta is pasta with herbs inside, I used basil, dill, coriander and nasturtium flowers for this pasta.

Super quick no cooking pasta sauce 

preparation time 5 minutes 

cooking time 0 minutes (allow 1-2 minutes for the pasta) 

serves 2

Ingredients

  • 250 gr or 8.8 oz fresh pasta (or two portions of dried pasta, cooked according to instructions on the packet)
  • 1 dl or 1/2 cup cream or creme fraiche
  • 1 knob of butter
  • 2 tomatoes, chopped
  • 1/2 onion, sliced thinly
  • 1 handful of coriander, chopped
  • a few sprigs of dill, chopped
  • 1 chilli, sliced
  • 1 pinch of sea salt

Mix all of the ingredients except the pasta. Boil the pasta and when it is cooked place it straight to in to the cream based mixture. Don’t drain the pasta, a little pasta water will form a natural part of the sauce.

And I have to admit I ate the pasta before even thinking of taking any photos!

 

Ravioli is another of my pasta favorites. Fresh pasta ravioli is ready in five minutes.

 

For me, ravioli is a perfect little parcel of food. The filling should burst out when you cut or bite in to the soft but just al dente pasta. Ravioli is perfect for sharing and if you make your own you can fill them with anything you like.

 

Last week was the first truly windy and very rainy day at the market. The market was almost empty of shoppers and just about everything got soaked. I still sold most of the pasta but had some ravioli to take home.

I actually attached my stall to the butcher who has his attached to his van and is much more secure than mine.

 

It took me a few hours to warm up and ravioli was a perfect Saturday night dinner. I melted butter in a frying pan with 3 cloves of peeled sliced garlic. I simmered the ravioli and served it with the crispy garlic infused butter.

It isn’t all butter, there is some pasta water as well, I promise!

    I love all your pastas, and this herb pasta is no exception. I sold homemade soup at the market a while ago so I know trading in the rain isn’t much fun, good thing you had some comforting ravioli to enjoy after a wet market day. Thank you for sharing with FF:)

      Thank you! Wow, home made soups! I have thought about adding soups but am just in a pre planning stage at this moment. I wold love to sell warm soup but there is no electricity so it would be too complex as it is now. Did you have a best seller? Thank you for co hosting FF! 🙂

        I don’t think I had a best seller, I didn’t really have a plan so my soup making days had to come to an end, but I have no regrets, it was too cold!

          It is absolutely getting colder and I have been researching thermal underwear! I only started in March so winter should be interesting 🙂 ps I don’t have a bestseller pasta, it is so varied from week to week, impossible to know 🙂

  5. I love flavouring my pasta with natural ingredients too and love that it adds colour too. Yours looks awesome.. and great idea with herbs and flowers. Never seen that before.

      You can do so much with pasta! The handkerchief pasta is great, especially for a dinner party. Add as much herbs as there is room, it is all flavor 🙂

      Pasta is so versatile! My favorite herb to use at the moment is tarragon, the leaves are perfect for handcerchief pasta but the nasturtium petals looks so pretty 🙂 x
