Beef with Grapefruit salsa

A few weeks ago I spent Sunday sunbathing, I am not kidding. It was so warm and it felt a bit like living in the tropics. After that one glorious day the weather turned to autumn. The leaves are changing color and the days are shorter but the light is brighter and winter has arrived! I went for a gorgeous walk on the beach.

The light was incredible. There was a light breeze and the dogs ran like crazy, having the best time.

 

We came home with spirits lifted after the walk and I wanted to cook something that I could just stick in the oven for a few hours whilst enjoying some chill out time with the dogs. Our older dog loves the sofa and this was his only destination as soon as we got home.

What can I say? I love that little face and I have never met a dog or human who has such a heart of pure gold!

 

I decided to cook some beef shortribs, perfect for slow cooking. I went for a short shopping trip. The green grocer had some amazing looking pink grapefruit so I got some along with some fresh ginger.

 

Beef with ginger and grapefruit

preparation time 10 minutes

cooking time 4 hours

oven 140C or 284F

serves

Ingredients

  • 4 beef shortribs
  • 2 grapefruits
  • 5 dl or 2 1/2 cup of beef stock
  • 2 dl grapefuit juice
  • 1 dl soy sauce
  • 1 dl fish sauce
  • 1/2 dl Shaoxing Rice Wine
  • 2 star anise
  • 1 Ancho Chile, sliced
  • 1 carrot, peeled and grated
  • ginger, cut julienne, as thin match sticks, about 2 tbsp
  • 2 celery sticks, cut in half lengthwise and sliced thinly
  • 1 head of garlic, peeled and lightly crushed
  • salt & pepper
  • oil for searing the beef

Peel the grapefruits with a knife and cut out the fillets.

Cut them over a bowl and squeeze out the juice from the remains. Set the fillets aside for the grapefruit and ginger salsa.

Salt and pepper the ribs of beef before browning them on all sides in the oil in an ovenproof pan with a tight lid.

Remove the browned beef and add the carrot, celery, ginger, garlic and chilli and stir until lightly browned.

Add the beef back along with the grapefruit juice, beef stock, fish sauce, soy sauce, Shaoxing rice wine and the star anise. Bring to the boil, put the lid on and place in the oven for 4 hours. Take a peek after about 3 ½ just to make sure it doesn’t get dry.

 

The beef is ready when the meat easily comes off the bones and just about falls apart. Let the dish cool slightly. Take the ribs out, remove the bone, any visible fat and pull the meat. Set aside.

Remove as much of the beef fat from the liquid as you can with the star anise. Place the vegetables and some of the liquid in the blender. Return the mixture to the rest of the liquid and add the beef.

 

Whilst the beef is cooking make the salsa.

 

Grapefruit and ginger salsa

preparation time 5 minutes 

cooking time 0 minutes 

serves 4 

Ingredients

  • Slice the grapefruit fillets thinly
  • Cut the ginger julienne, as thin as you can
  • Slice a small handful of coriander thinly
  • 1 tbsp olive oil
  • 1 pinch of sea salt

Mix the grapefruit with most of the ginger, set some ginger aside for garnish. Add olive oil, the coriander and taste with sea salt.

 

Serve the beef with the grapefruit salsa.

I did a pearl barley salad to go with the beef. It was the perfect comfort food and the grapefruit added a nice citrus zing. The vegetables made the sauce light but still thick.

 

If you are at home this is a great recipe for slow cooking. Leave it to do it’s magic in the oven, let the house get filled with delicious smells and just tuck in! A dish for colder weather and perfect for sharing.

    This sounds delicious and so very different. I never would have thought to use the grapefruit in this way. Very creative.
