Scallops with Salmon Caviar and Watercress

Eating by the season is a great way to enjoy produce when it is at it’s very best. Since I moved to the seaside I have gotten to know more about seafood seasonality.

I was at the fishmongers the other day and realized I had not seen any scallops this year. The fishmonger confirmed that it is scallop season but they had problems with the boat. When they are in season he always sells wonderful local scallops in their shell.

He did have some scallops that they bought and I got a few as a starter.

I picked up fresh watercress from the green grocer and I had a jar of salmon roe in the fridge and a dish was taking shape as I was walking home.

I wanted to make a dish that was about simplicity. This is perfect as a starter or as part of a seafood dinner.

 

Scallops with Salmon roe

preparation time 5 minutes 

cooking time about 5 minutes 

serves 2 as a starter

Ingredients

  • 4 good sized scallops with the roe
  • 50 gr ot 1.7 oz Salmon Roe
  • Watercress
  • 1 dl or 1/2 cup extra virgin olive oil
  • Seville orange and chilli syrup
  • oil and butter for cooking
  • Salt to taste

Clean the scallops and separate the roe.

Score the top of two of the scallops and set them aside.

Cut the remaining scallops in 4-5 pieces along with the roe.

Mix roughly chopped watercress and good extra virgin olive oil in a blender. Strain through a cheesecloth.

Heat a vegetable based oil in a small frying pan, add butter when the oil is hot. I used rapeseed oil. Brush the cut side of the scallop with the Seville orange and chilli syrup. Honey and chilli flakes works as well.

Place, cut side down in the pan and let caramelize before pan frying the other side. Pan frying only takes a few minutes.

Steam the chopped scallop and roe. They will cook in less than 2 minutes.

Plate the steamed scallop and add the salmon roe. Place the cooked scallop on top and add watercress and watercress oil before serving.

It was a simple dish with great flavors, smooth scallops, a hint of citrus and chilli, salty salmon roe and slightly peppery watercress that goes very well together.

The dish is easy to prepare and put together last minute and would be great to share with friends.
