Noodle Soup in the last of winter

Enoki mushroom and rice Noodle Soup

This year has been colder than in a very long time. Winter arrived late and it doesn’t quite seem to want to let go. Snow is still lingering and Spring like days are mixed with winter.

It was cold when I woke up and I hadn’t warmed up at all so I decided to make a noodle soup for breakfast.

I didn’t have a lot of ingredients so I decided to use what I had. Rice noodles, enoki mushrooms, fresh beansprouts and Chinese chives.

Once I got the ingredients out and looked at them I realised that all but the Chinese chives had the same colour! Does that ever happen to you?

This dish is super easy to make, it fills you up and is warming from the inside.

 

Enoki mushroom noodle soup in a spicy broth 

preparation time 5 minutes 

cooking time 5-8 minutes 

serves 1

Ingredients

  • rice noodles, as much as you are in the mood for, I used a handful
  • 100 gr or 3.5 oz enoki mushrooms
  • 5 dl or 2 ½ cup Chicken stock, use any stock you prefer
  • a good handful of fresh beansprouts
  • about 1 tbsp chopped Chinese chives
  • about 1 tsp Hot Sauce, more if you prefer. I used my own Heatononomy Very Hot Hot Sauce

Place the cold stock in a pan and soak the noodles for a few minutes. Bring the stock to a boil and add the enoki mushrooms and the hot sauce. Taste to see if you need more hot sauce.

The soup is ready when the enoki mushrooms have boiled for at least 2 minutes and the noodles are soft. Before serving garnish with the fresh beansprouts and the Chinese chives.

I was so hungry I ate the bowl in no time and instantly felt warmer and ready to take on the day ahead. Rice noodles cook so quickly and makes for perfect fast food. What is your go to dish for busy days?

    I’m really feeling for you Petra – I saw London’s weather over the weekend has been hovering around zero – total madness, but at least you have your delicious dishes to keep you warm!
