Halibut with wild rocket and more sushi

Where did the summer go? I feel as if I have spent most of it in the kitchen. I remember days when it was so hot I didn’t want to put the oven on. The beach seemed to be the most sensible place as there is always a welcome breeze.
The dogs don’t like swimming but they love the beach.
There has been sushi making, quite a lot of it and I have a very long road ahead of me to perfection but there have been some highlights. I can’t stop thinking about new flavours and here are my latest favourites.

I haven’t had much time to be creative and cook for myself but I have a little time every now and then. This time I had halibut steaks for dinner and I wanted something that was simple but nice and it turned out to be a dinner of foraged and home grown produce to match the fish.
I picked some wild rocket. leaves and flowers on the beach, it has a strong rocket flavour and is delicious.
I placed it in a blender with olive oil and blended it to a wild rocket oil to go with the halibut.
Halibut is a delicious fish and I wanted to keep it simple. I pan fried the halibut together with sliced garlic and finished it in the oven for 8 minutes at 160C or 320F. I rested the fish in the pan for an additional 5 minutes.
Just before serving add the wild rocket oil, I added some wild rocket flowers as well, grated lemon zest and the crispy garlic.
I served the halibut with wasabi mashed potatoes. The flavours worked well together halibut is one of my favourite fish steaks.

I hope you try it, it doesn’t have to be raw fish 🙂 The sushi is the rice, it should be fresh, soft and delicious on it’s own! If you try it, I hope you will like it 🙂
