Salsa baked feta cheese with poached egg

My Sunday treat is usually egg and bacon for brunch, catching up on the news and the week in general. Well, egg is the theme and below are a few of my favorite brunches. Do you have a favorite brunch dish?

This week I thought I would do something different and opted for feta cheese. I love the tangy, salty flavor of feta and it is delicious with egg.
Baking the feta changes the texture, it becomes softer and it is delicious when served warm.
I had heirloom tomatoes that I used to make a salsa.

For the salsa I chopped the tomatoes, onion, a chilli, coriander and wild garlic, mixed it all and added a pinch of sea salt.
Salsa baked feta cheese
preparation time 5 minutes
cooking time 20 minutes
oven 170C or 338F
serves 2
Ingredients
- 200 gr or 7 oz Feta Cheese
- 4 heaped table spoons of tomato salsa
- olive oil to drizzle before serving
Cut the feta cheese in to 4 rectangles and place a heaped spoonful of tomato salsa on each rectangle.
Bake the feta cheese in the oven for 20 minutes, perfect time to prepare drinks and cut a few slices of bread to soak up the juices from the tomatoes and the cheese.
Whilst the feta cheese was baking I poached a couple of eggs to go on top.
Place the eggs on top of the feta cheese and drizzle with olive oil before serving.

The feta cheese might have moved up to my number one favorite spot and I just had to do a blog to share.
No matter what my favorite brunch dish is to me, it is the time off, not rushing anywhere, enjoying the food and the company.
