Cinco de Mayo Foraged Greens Tacos

As I was walking along the beach today I was thinking of Cinco de Mayo. I am not quite sure how my thoughts arrived at this topic but I thought tacos would be nice.
I am not even sure where I would go to get Mexican food here so I thought I would see if I could make tacos from what I could forage on the beach.
Foraging always makes the walk more interesting and I can take it home and eat it, it is a win win every time!
I was looking for asparagus but couldn’t see any. All of the sudden I spotted a friend who is a master forager, how about that for good timing? He was carrying a bag of asparagus and simply told me to open my eyes.
In no time at all I spotted quite a a few asparagus stalks! Magic, or how blind was I? Ha ha.

I found Sea Sandwort on the beach, they taste a bit like a mix between cucumber and peas. They are delicious.

I also found wild fennel fronds, rock samphire, wild rocket, wild rocket flower and rosehip petals.

I soaked and cleaned the greens before steaming them.
I had some shop bought soft tortillas and I decided to brown them in a frying pan.
I placed feta cheese and marscapone in a blender and blended until it was smooth before placing it on the soft tortilla.
I added the foraged greens and some toasted sunflower seeds.


It wasn’t a traditional taco but it was delicious and Happy Cinco de Mayo!

Inspiring, as always. Had to google Sea Sandwort. Sounds interesting. I bought and planted Oyster Leaf seeds; only one sprouted and I killed it by constantly poking at it!

Thank you. Sea Sandwort is absolutely delicious, it just needs a lot of cleaning, growing in sand and all!
I have seen chefs cooking with oyster leaf on TV but never tried it. In all honesty I can’t grow anything at all! M is the gardener and I am the cook and am sure it might have been the seeds! 🙂 x
