Lemon Garlic & Prawn Spaghetti

I don’t know about you but I always eat too much over the holidays and this year was no different. I did a mini version of a Swedish Christmas dinner and I cooked a whole turkey on Christmas day. All leftovers were made in to a curry by M on boxing day and I am not kidding, we had it three days in a row! Like all currys it tasted better on day three but I was glad there was no more! The holidays have been lots of walks, we found a new beach and we all loved it. It was sandy and rocky, it was bright and windy and it was a great walk.

I was checking out the seaweeds and L was on my heels checking that everything was ok!

With the cobwebs blown away I felt a desire for something light and simple for dinner. I didn’t want to go shopping so I had a look around and found lemons in the fruit bowl, garlic in the vegetable bowl, pasta in the pantry and prawns in the freezer. I felt inspired and here is the result.
Lemon, Garlic & Prawn Spaghetti
preparation time 5-10 minutes
cooking time 10-12 minutes
serves 2
Ingredients
- 12 de veined and peeled king prawns, chopped
- 6 cloves of garlic, chopped
- butter to pan fry the garlic
- juice of 2 lemons
- zest of 1 lemon
- 1 tsp Heatonomy Very Hot Hot Sauce
- 3 dl oe 1 1/2 cup chicken stock, or use vegetable or fish stock
- 1 heaped tbsp corn starch
- salt & pepper to taste
- Aleppo pepper
Fill a large pan with water and bring to a boil. Add salt and the place the pasta in the water.
Pan fry the chopped garlic and add the prawns when soft. Add salt and pepper.
Mix the lemon juice, chicken stock and corn starch before adding it to the pan with the garlic and prawns. Bring the sauce to a boil for a couple of minutes and then turn the heat down to just simmering until the pasta is ready.
Add the pasta to the sauce with some of the cooking water. Taste with salt and pepper and give it a generous sprinkle of Aleppo pepper amd serve.

It was one of those dishes that tasted even better than I imagined and I couldn’t help a second and even a third helping. It hit the spot and it was delicious in all it’s simplicity, a perfect weeknight meal.
