Happy Valentines brunch with beetroot and almond waffles

Valentines is here again. The card industry celebrates another occasion to sell cards, this time lots of red and pink with incredibly cute hearts and teddy bears in them.

I didn’t really have time to think about this until it was the day before. I didn’t have a card, don’t even think about a present and as we are going out tonight, not even a special dinner planned. I can’t say I felt too bad and out all this, instead there was a lazy start to the day and all of the sudden it dawned on me that I could make a Valentines brunch.

It all started with one beetroot that needed to be used. I wasn’t quite sure what to do with it as it was, well just one. In my morning eureka moment I thought it would be perfect to use it in waffles and it would make them pink and pretty.

I got so inspired I got out of bed to get started, it would take a while so brunch would be perfectly timed.

 

Beetroot and almond waffles 

preparation time 5 minutes 

cooking time about 10 minutes for 4 waffles 

serves 2

Ingredients

  • 1 dl or 1/2 cup mixed wheat four and almond flour
  • 1 dl or 1/2 cup milk
  • 2 eggs
  • 1 tbsp sugar
  • 1 pinch of salt
  • 1 fine grated beetroot
  • 2 tbsp coconut oil, melted

Mix the flour and milk and whisk until thee are no lumps. Add the eggs, sugar, salt and beetroot and mix everything, don’t overdo the whisking. Last add the coconut oil. Waffles need a  bit of fat not to stick to the waffle iron and coconut oil adds a wonderful coconut flavour.

Heat a waffle iron and add the mixture.

Let it cook until the waffle is cooked through and slightly crispy on the surface.

 

Whilst the waffles were cooking I did some streaky bacon in the oven and I poached some eggs. A friend, who has just been on holiday in Canada had brought some delicious maple syrup and I thought this would be a good time to open the bottle.

 

It was a perfect brunch, I served it with some pomegranate seeds on the side and thought it wasn’t a bad valentines present.

Happy Valentines, no matter if you are in a couple or single, take it as a day to think a little extra about your friends and family and maybe eat something a nice as well!

    Just lovely Petra, love how you used beetroot in your waffles. It sounds so much healthier and better with beetroot and almond flour doesn’t it? Do you cook your beets in the oven or on the stovetop?

      Hi Loretta they didn’t come out as pink as I would have wanted to but they were very nice with the beef inside 🙂
      I just grated the beet raw very fine. Next time I might add another egg to get a little more volume but they were lighter than regular waffles! 🙂 happy Valentine

      ha ha me too! we didn’t do cards and agreed that this was better! It was also a great way to sneak some extra veg in there 🙂 I hope your week is good x
