Squid Ink and Crab pasta with tomato salsa

Sometimes I want something quick and easy. Pasta is perfect go to food and this week when I was making pasta for the market I made extra for dinner.

I had friends coming for dinner and didn’t have a starter, or time to prep. This is a super quick recipe and it hit the spot. I had a whole, cooked crab but you can use a dressed crab if you don’t want to pick the meat, or even tinned meat. I used both the brown and the white meat of the crab.

The greenhouse is full of chillies and tomatoes. They grown in an abundance and I picked some tomatoes to go with the crab. I had yellow, red and black tomatoes that I picked for a salsa.

 

Squid Ink & Crab Pasta with a Tomato and Mangetout salsa

preparation time 10 minutes

cooking time 1-2 minutes

serves 6 as a starter or 2 as a main course

Ingredients

  • 1 medium sized crab, picked with the brown and the white crab meat separated
  • 250 gr or 8.8 oz pasta
  • 6 cherry tomatoes, de seeded and sliced fine
  • 6 mange tout, sliced fine
  • 1/2 red chilli, de seeded and sliced fine
  • 6 mint leaves, shredded fine
  • 5-10 gr butter
  • 2 tbsp cream
  • olive oil
  • sea salt

I picked the crab and separated the brown and the white meat. To make sure there was no bone go through the white meat twice.

Mix the brown meat with the cream. Add a pinch of salt if necessary. Set aside until you are ready to serve.

De seed and slice the tomatoes fine. Mix with the mangetout, mint and chilli. Let it drain until you are ready to serve. Just before serving mix with a little extra virgin olive oil and a pinch of sea salt.

Bring a big pan filled with salted water to a boil and cook the pasta, as it is fresh it will only take 1-2 minutes. When cooked place the pasta in a bowl and add the butter. Let the pasta mix with the melting butter.

Place the brown crab meat on a plate. Add the pasta, the salsa and finally white crab meat. Drizzle over some extra virgin olive oil and serve.

      Thank you! The color is great! A little squid ink goes a long way. Am sure you could buy it dried if you don’t want to make your own! It doesn’t have a strong seafood flavor.
