Toasted cumin pasta two ways

One of my favorite things with fresh pasta is that it cooks in 1-2 minutes. The toasted fragrant cumin pasta has so much flavor it works on it’s own as well as with meat. I am sharing two toasted cumin pasta recipes here. They both cook in less than 30 minutes, quicker than any take away.

The first dish is so easy. The cumin seeds packs a lovely flavor punch. All you need is pasta, butter, your favorite grated cheese and a big pot of boiling, salted water.

 

Separate the pasta strands gently with your fingers and boil for 1-2 minutes, no longer. Place in  big bowl with some butter and a little pasta water. Mix and taste, add a little salt and pepper if you wish. Add grated cheese and serve.

I had four Toulouse sausages in the fridge and decided to use them for a pasta dish. It wasn’t enough for dinner with M’s appetite but they would be great in a pasta sauce. I removed the casing and broke the sausage down so it would cook quicker and to maximize flavor. I added carrot as I love it with cumin seeds and half an apple for the pork and here is my second recipe.

 

Toasted cumin pasta with sausage ragu

preparation time 5 minutes

cooking time 15 minutes

serves 2

Ingredients

  • pasta for two
  • 4 Toulouse sausages
  • 1 onion, peeled and sliced
  • 1/2 medium leek, sliced
  • 1 carrot, chopped
  • 1/2 apple, peeled and chopped
  • 1 can of tinned tomatoes
  • oil for frying
  • salt and pepper to taste
  • a pinch of sugar

Garnish

  • crumbled goats cheese
  • chevril

Heat the oil in a pan and brown the sausage meat. Add the onion, leek, carrot and apple and fry for a couple of minutes.

Add the tinned tomatoes, salt, pepper and sugar and let cook for 5-10 minutes. The sugar can be replaced with honey or agave nectar if preferred, it is to bring out the sweetness in the tomatoes. Taste before adding the spaghetti. Plate up, sprinkle over the goats cheese and add the chevril before serving.

Both recipes are very quick to make and they are filled with flavor, great for a night in as well as to share with friends.

  1. This sounds so delicious! We have been making a lot of our own pastas lately but haven’t branched out to anything adventurous yet. I emailed the recipe to my hubby, I think he will love it!

      The cumin is so fragrant and gives the pasta flavor as well as texture! I have to admit when I make pasta the whole kitchen seems to be covered in flour but it is worth it.
