Twice fried chicken wings
Sometimes I can stare at my fridge for ages and not get a single strand of inspiration to cook anything and sometimes I just feel inspired. Eating the chicken wings at Duck and Rice was very inspiring and I knew I had to try and make them.
When I came to the Black Pig Butchers there was a bag of chicken wings for two pounds, there was eight wings and I took it as a sign for me to actually make the chicken wings.
First of all I was intrigued as I have never thought of cutting the chicken wings lengthways. Just the middle part of the wings.
Chicken wings with green peppercorns at the Duck and Rice
I didn’t ask them how the chicken wings were made but I had an idea that I thought I would try.
Twice fried chicken wings
preparation time 10 minutes
cooking time 6 minutes + 3 minutes or until cooked through and golden
serves 4 as a small starter
Ingredients
- 8 chicken wings, the middle part with 2 bones only, cut in half lengthways
- 1 tbsp Chinese five spice
- 1/2 dl or 1/4 cup fish sauce
- 1 tbsp Shaoxing rice wine
- 4 dl or 2 cups of goundnut oil
Mix the fish sauce, the Shaoxing rice wine and the Chinese five spice and let marinate for at least 4 hours. Over night if you can.
Heat the oil up and fry the chicken wings golden. Let them drain.
Fried chicken wings
Before serving heat the oil up again and and fry the wings a second time to make them extra crispy. Serve with a dipping sauce.
Rice wine vinegar dipping sauce
preparation time 5 minutes
cooking time 0 minutes
serves 4
Ingredients
- 1 dl or 1/2 cup rice wine vinegar
- 1 tbsp fish sauc
- 1 red chilli, sliced thinly with seeds in
Mix the ingredients and set stand for about 20 minutes for the flavours to mix. Use more or less chilli according to taste
I think if the chicken wings are marinated over night they will have even more taste but they were delicious and I will make them again Now I just need to think of whom to invite and try them on!
