Dried Lime Chilli Oil Brisket stew

I bought brisket for dinner with the aim of cooking it whole. I was going to slow cook it until it was tender and fell apart.

My plans didn’t quite go as planned and I started cooking later than planned. I still wanted the brisket and in order to cook it quicker I sliced it thinly before cooking it.

It was a hot day and I am not sure why I wanted to use the oven but I really wanted the brisket. I looked through my fridge and used as many vegetables as I could find to make a light dish.

cooking time 2 hours

oven 150C or 300F

serves 4

Ingredients

  • 700 gr brisket, sliced thin
  • 2 celery stalks + celery leaves, chopped fine
  • 2 carrots, chopped fine
  • 1 head of garlic with the cloves peeled and roughly chopped
  • 1 red pepper, de seeded and chopped fine
  • 2 chillies, I used a cayenne, sliced
  • 1 tin of chopped tomatoes
  • 1 handful of green beans, top and tailed and each one cut in 3
  • 1/4 head of cauliflower, roughly chopped
  • 4 dl beef stock
  • 1/4 dl soy sauce
  • 1/4 dl fish sauce
  • 1/4 fl Shaoxing rice wine
  • 1 bay leaf
  • 1/2 dl or 1/4 cup Dried Lime Chilli Oil
  • Feta Cheese for garnish

Heat the dried lime chilli oil in a frying pan and pan fry the sliced brisket in batches, allowing it to brown.

When all of the brisket is browned place it in an oven proof pan with a lid.

Add the bay leaf, carrot, chilli, celery, garlic, red pepper, tinned tomatoes, beef stock, fish sauce, soy sauce and Shaoxing rice wine. Place the lid on top, bring the stew to a boil and place the pan in the oven to cook for 1 hour 10 minutes.

When time is up add green beans and cauliflower and cook for another 20 minutes.

Taste to see if you need any more salt before serving. I added some crumbled feta cheese and served it with chunks of fresh bread.

The vegetables added flavor and texture. The meat, sliced so fine was delicious and tender and it was a light dish. The spices in the Dried Lime Chilli Oil came through and worked great with the meat and the vegetables.
